SEMIA BIRIYANI


INGREDIENTS:

Double roasted semia – 1 cup
Water – 2 cups
Beans, carrot, and shelled peas – 1 cup
Mint leaves - a handful
Big onion – 1
Ginger – 1 small piece
Garlic – 2 pods
Green chillies - 2
Cinnamon stick – 1
Clove – 2
Cardamom – 1
Garam masala - 1/2 tsp
Oil - 1 tablespoon
Ghee - 1 tablespoon
Fried cashews - 4
Salt - as per taste

METHOD:

Wash and cut the vegetables into small cubes.

Chop onions & green chillies finely. Crush ginger and garlic.

Heat oil and ghee in a pan, add the whole spices, mint, onions, green chillies and crushed ginger- garlic. Fry till the oil leaves the sides. Add the vegetables. Sauté for two minutes. Pour in the water and when it starts boiling add salt, semia and garam masala. Mix well. Simmer the stove and cover with a lid. Cook till done.

Garnish with fried cashews and coriander leaves. Serve hot with onion raitha or any raitha of your choice.

NOTE: Ordinary semia can be fried in ghee till golden brown and can be substituted instead of double roasted semia.
